  1. Provide 4 over ripe bananas
  2. Get 75 g butter (room temp)
  3. Take 100 g caster sugar
  4. You need 1 large egg
  5. Get 1 tsp vanilla extract
  6. You need 1 tsp bicarbonate of soda
  7. Get 1 pinch salt
  8. Provide 185 g plain flour
  9. Use 85 g dark chocolate chips
  10. Use 75 g walnut pieces
Instructions to make Chocolate Chip & Walnut Banana Bread:
  1. Preheat your oven to 180C fan. Grease and line a loaf pan with baking parchment.
  2. In a large mixing bowl, beat together the butter and sugar with an electric beater for around 5 minutes until pale and fluffy.
  3. Beat in the egg for around 5 minutes, then add in the vanilla extract. Don't worry if the mixture looks curdled.
  4. In a separate bowl, mash 3 of the bananas until almost smooth, leaving a few chunks for texture.
  5. Gently fold in the mashed banana to the egg mixture, followed by the flour, bicarb, salt, walnut pieces and chocolate chips until just combined. Be careful not to over mix.

  7. Bake for around 50 minutes in the middle of the oven, or until a skewer comes out just clean.
